Cajamarca Community
Description
Sourced from the Cajamarca region in the province of Cutervo, this community-grown coffee reflects the collective efforts of producers committed to continuously improving quality.
Located at an elevation of 1,900 meters, the area of Santo Domingo de la Capilla offers ideal conditions for growing specialty coffee: fertile soil, a stable climate, and high altitude. After facing major challenges such as coffee leaf rust, the producers adapted their methods by moving their crops to higher altitudes and optimizing their agricultural practices.
This lot combines several varieties, including red and yellow Caturra, Pache, Catimor, Typica, and Bourbon, which are carefully cultivated and then processed using the washed method. Drying is done in the sun for 5 to 10 days, allowing a clean and balanced profile to develop.
When brewed, this coffee stands out for its beautiful complexity, with notes of caramel, vanilla, ripe pear, and plum, offering a smooth, fruity, and approachable experience.
